I recently discovered that I LOVE collard greens. So I decided to try my hand at making them at home. They were so EASY! You just have to make sure you wash them well. It took me about 20 minutes to wash each leaf individually. Then I just cut them up, plopped them in a pot, added some seasoning (salt, pepper, garlic and onion flakes) and a little bit of water, set them to Medium and Voila! 30 minutes later, delicious collard greens. YAY!
I also decided to try a new recipe... Fish Cakes! (like Crab Cakes, but with fish) I bought WAY too much Tilipia last time I went to Costco so I needed something to use it up (plain 'ole baked fish gets boring). I'm happy to report they were delicious, too! So delicious in fact, I had to take a picture... :)
The white stuff on the Fish Cake was a sour cream sauce... it was VERY good.
